Crispy Garlic Butter Parmesan Roasted Potatoes
These crispy, golden roasted potatoes with garlic, parmesan, and a hint of bacon are the ultimate side dish for any meal! They’re tender on the inside, crispy on the outside, and bursting with savory flavors.
Ingredients
- 3 pounds (1.5 kg) baby red potatoes, washed and quartered
- 1/4 cup olive oil
- 6 garlic cloves, finely chopped or minced
- Salt and black pepper to taste
- 1 tablespoon Italian seasoning
- 3/4 cup freshly grated Parmesan cheese
- 1/2 cup unsalted butter
- Fresh parsley, chopped (for garnish)
- 1/2 cup crispy bacon bits (optional)
Directions
- Preheat your oven to 400ºF (200°C) and set the rack to the bottom position.
- Wash and quarter the potatoes.
- Grease a large baking sheet with non-stick spray or olive oil.
- Parboil the potatoes in boiling water for 5-8 minutes to soften them slightly for better crisping.
- In a large bowl, mix olive oil, garlic, salt, pepper, Italian seasoning, and Parmesan. If needed, add a bit more olive oil to the mix.
- Toss the parboiled potatoes in the garlic Parmesan mixture, making sure they are evenly coated.
- Arrange the potatoes on the prepared baking sheet, cut side down, in a single layer.
- Roast the potatoes for 25 minutes, flipping them halfway through (around 15 minutes), until they are golden and crisp.
- While the potatoes are roasting, melt the butter and stir in the chopped parsley.
- Once the potatoes are done, remove them from the oven and drizzle with the melted butter mixture. Top with bacon bits if using and toss to coat.
