Apple Pie Filling Coffee Cake

This Apple Pie Filling Coffee Cake combines the warmth of apple pie with the softness of coffee cake. A moist, cinnamon-spiced cake topped with apple pie filling and a buttery crumb topping—perfect for breakfast, dessert, or a cozy treat!


Ingredients

Cake:

  • 2 cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream

Apple Pie Filling:

  • 1 (21 oz) can apple pie filling

Crumb Topping:

  • ¾ cup all-purpose flour
  • ½ cup packed brown sugar
  • 1 tsp ground cinnamon
  • ¼ cup unsalted butter, melted

Optional Glaze:

  • ½ cup powdered sugar
  • 1–2 tbsp milk

Instructions

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. Make the Cake Batter:
    • In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
    • In a large bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then mix in vanilla extract.
    • Gradually add the dry ingredients to the butter mixture, alternating with sour cream, until just combined.
  3. Assemble the Cake:
    • Spread the batter evenly into the prepared baking dish. Spoon the apple pie filling over the batter, spreading it out evenly.
  4. Prepare the Crumb Topping:
    • In a small bowl, mix flour, brown sugar, and cinnamon. Stir in melted butter until crumbly. Sprinkle evenly over the apple pie filling.
  5. Bake:
    • Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
  6. Add the Glaze (Optional):
    • Mix powdered sugar and milk to create a drizzle consistency. Once the cake has cooled slightly, drizzle the glaze over the top.

Notes

  • For extra flavor, sprinkle chopped pecans or walnuts over the crumb topping before baking.
  • Use homemade apple pie filling for a fresh, personalized touch.
  • Store leftovers in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days.
