Berry French Toast Casserole Recipe

This Berry French Toast Casserole is a decadent breakfast bake loaded with fresh berries, soft bread, and a hint of cinnamon. Topped with a sweet crumble and baked to golden perfection, it’s perfect for brunch or a special morning treat!


Ingredients:

For the Casserole:

  • 1 loaf (12 oz) French bread, cubed
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 6 large eggs
  • 2 cups whole milk
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon

For the Crumble Topping:

  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter, cold and cubed
  • 1/2 tsp cinnamon

Instructions:

  1. Prepare the bread and berries: Grease a 9×13-inch baking dish. Arrange half of the bread cubes in the dish, top with half of the berries, then layer the remaining bread and berries on top.
  2. Mix the custard: In a large bowl, whisk together eggs, milk, sugar, vanilla extract, and cinnamon. Pour the mixture evenly over the bread and berries, pressing gently to ensure all the bread absorbs the custard.
  3. Refrigerate: Cover with plastic wrap and refrigerate for at least 2 hours or overnight for best results.
  4. Make the crumble topping: In a small bowl, combine flour, brown sugar, cinnamon, and cold butter. Use a fork or your fingers to create a crumbly mixture.
  5. Bake: Preheat to 350°F (175°C). Sprinkle the crumble topping evenly over the casserole. Bake for 40–45 minutes, or until golden brown and set.
  6. Serve: Allow to cool slightly before serving. Dust with powdered sugar or drizzle with maple syrup if desired.
