This Berry French Toast Casserole is a decadent breakfast bake loaded with fresh berries, soft bread, and a hint of cinnamon. Topped with a sweet crumble and baked to golden perfection, it’s perfect for brunch or a special morning treat!
Ingredients:
For the Casserole:
- 1 loaf (12 oz) French bread, cubed
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 6 large eggs
- 2 cups whole milk
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
For the Crumble Topping:
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup unsalted butter, cold and cubed
- 1/2 tsp cinnamon
Instructions:
- Prepare the bread and berries: Grease a 9×13-inch baking dish. Arrange half of the bread cubes in the dish, top with half of the berries, then layer the remaining bread and berries on top.
- Mix the custard: In a large bowl, whisk together eggs, milk, sugar, vanilla extract, and cinnamon. Pour the mixture evenly over the bread and berries, pressing gently to ensure all the bread absorbs the custard.
- Refrigerate: Cover with plastic wrap and refrigerate for at least 2 hours or overnight for best results.
- Make the crumble topping: In a small bowl, combine flour, brown sugar, cinnamon, and cold butter. Use a fork or your fingers to create a crumbly mixture.
- Bake: Preheat to 350°F (175°C). Sprinkle the crumble topping evenly over the casserole. Bake for 40–45 minutes, or until golden brown and set.
- Serve: Allow to cool slightly before serving. Dust with powdered sugar or drizzle with maple syrup if desired.
