Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup chopped fresh broccoli (steamed)
- 1/2 cup shredded cheddar cheese
- 1/4 cup cream cheese, softened
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions:
- Preheat oven: Preheat to 375°F (190°C) and grease a baking dish.
- Prepare the chicken: Using a sharp knife, carefully cut a pocket into the side of each chicken breast, being careful not to cut all the way through. Season with garlic powder, paprika, salt, and pepper.
- Make the filling: In a bowl, mix the steamed broccoli, cheddar cheese, and cream cheese until well combined.
- Stuff the chicken: Fill each chicken breast with the broccoli cheese mixture, securing with toothpicks if necessary.
- Sear the chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2–3 minutes per side until golden brown.
- Bake: Transfer the skillet to the oven (or place the chicken in the prepared baking dish) and bake for 20–25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Serve: Let rest for 5 minutes before slicing. Serve with a side of rice, mashed potatoes, or a fresh salad.
