Best Ever Chewy Brownies

These Best Ever Chewy Brownies are perfectly chewy with rich chocolate flavor and a fudgy center. Made with just one bowl, these brownies come together quickly and are ready in less than an hour! Ingredients:

  • 5 tablespoons (71 grams) unsalted butter
  • 1 1/4 cups (249 grams) granulated sugar
  • 2 large eggs + 1 egg yolk (cold)
  • 1 teaspoon vanilla extract
  • 1/3 cup vegetable oil
  • 3/4 cup (75 grams) cocoa powder
  • 1/2 cup (63 grams) all-purpose flour
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 3/4 cup (128 grams) semisweet chocolate chips

Instructions:

  1. Preheat oven to 325°F (163°C). Line an 8×8-inch metal pan with parchment or foil and grease with nonstick spray.
  2. In a microwave-safe bowl, melt butter and sugar together in the microwave for about 1 minute.
  3. Whisk in the eggs, egg yolk, and vanilla extract. Add oil and cocoa powder, stirring to combine.
  4. Mix in flour, cornstarch, and salt until smooth. Fold in chocolate chips.
  5. Pour batter into the prepared pan, spreading evenly. Bake for 30 minutes, or until a cake tester comes out with moist crumbs.
  6. Cool completely before cutting into squares.

Recipe Notes:

  • Use Dutch-processed cocoa powder for the best flavor, but natural cocoa powder works as well.
  • Avoid using a glass or ceramic pan to ensure the brownies bake evenly.
  • For thicker brownies, double the recipe and bake in a 9×13-inch pan.
  • Store brownies at room temperature in an airtight container for up to 3 days. They are gooey when warm, chewy at room temperature, and fudgy when chilled.
