Ingredients
Shortbread Crust:
- 2 cups all-purpose flour
- ½ cup granulated sugar
- 1 cup unsalted butter, softened
Pecan Pie Filling:
- 3 large eggs
- 1 cup light corn syrup
- 1 cup brown sugar
- 2 tbsp unsalted butter, melted
- 1 tsp vanilla extract
- 2 cups chopped pecans
Instructions
- Prepare the Crust:
- Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
- In a bowl, mix flour, sugar, and butter until a crumbly dough forms.
- Press the mixture evenly into the prepared pan. Bake for 15–20 minutes or until lightly golden.
- Make the Pecan Filling:
- In a medium bowl, whisk together eggs, corn syrup, brown sugar, melted butter, and vanilla extract until smooth. Stir in the chopped pecans.
- Assemble and Bake:
- Pour the filling over the pre-baked crust, spreading evenly.
- Bake for 30–35 minutes, or until the filling is set and slightly golden.
- Cool completely before slicing into bars.
