Best Ever Pecan Pie Bars

These pecan pie bars are a decadent twist on the classic dessert! Featuring a buttery shortbread crust and a gooey pecan pie filling, they’re perfect for holidays or whenever you crave a sweet, nutty treat.


Ingredients

Shortbread Crust:

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • 1 cup unsalted butter, softened

Pecan Pie Filling:

  • 3 large eggs
  • 1 cup light corn syrup
  • 1 cup brown sugar
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 2 cups chopped pecans

Instructions

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
    • In a bowl, mix flour, sugar, and butter until a crumbly dough forms.
    • Press the mixture evenly into the prepared pan. Bake for 15–20 minutes or until lightly golden.
  2. Make the Pecan Filling:
    • In a medium bowl, whisk together eggs, corn syrup, brown sugar, melted butter, and vanilla extract until smooth. Stir in the chopped pecans.
  3. Assemble and Bake:
    • Pour the filling over the pre-baked crust, spreading evenly.
    • Bake for 30–35 minutes, or until the filling is set and slightly golden.
    • Cool completely before slicing into bars.

Notes

  • Use parchment paper for easy removal and clean slices.
  • Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • For extra richness, drizzle with melted chocolate or serve with whipped cream.
