Blackened Shrimp Avocado Cucumber Bites Recipe

These Blackened Shrimp Avocado Cucumber Bites are a light, refreshing, and flavorful appetizer that’s perfect for any occasion! The combination of tender, spicy blackened shrimp, creamy avocado, and crisp cucumber creates a satisfying bite-sized treat that is both healthy and delicious. Whether you’re hosting a party or looking for a quick snack, these bites are sure to impress.


Ingredients:

  • For the Blackened Shrimp:
    • 1 lb large shrimp, peeled and deveined (tails removed)
    • 1 tablespoon olive oil
    • 1 tablespoon paprika
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1/2 teaspoon cayenne pepper (optional, for extra heat)
    • 1/2 teaspoon dried thyme
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
  • For the Cucumber Avocado Base:
    • 1 cucumber, sliced into 1/4-inch thick rounds
    • 1 ripe avocado, peeled and diced
    • 1 tablespoon fresh lime juice
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper
    • Fresh cilantro (optional, for garnish)

Instructions:

  1. Prepare the Shrimp:
    • In a small bowl, combine paprika, garlic powder, onion powder, cayenne pepper (if using), thyme, oregano, salt, and black pepper.
    • Pat the shrimp dry with a paper towel and coat them evenly with the spice mixture.
    • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
    • Add the shrimp to the skillet in a single layer and cook for 2-3 minutes per side, or until they are pink, opaque, and slightly charred around the edges. Remove from heat and set aside.
  2. Prepare the Avocado Cucumber Base:
    • In a small bowl, mash the avocado with a fork until smooth but still slightly chunky.
    • Add lime juice, salt, and pepper, and mix well.
    • Slice the cucumber into 1/4-inch thick rounds and arrange them on a serving platter.
  3. Assemble the Bites:
    • Spoon a small amount of the mashed avocado mixture onto each cucumber round.
    • Top with one blackened shrimp on each avocado-topped cucumber.
    • Garnish with fresh cilantro if desired.
  4. Serve:
    • Serve immediately as a refreshing appetizer, or refrigerate for 15-20 minutes before serving if you prefer chilled bites.
