This moist and tender Blueberry Cream Cheese Bread is bursting with fresh blueberries and has a rich cream cheese swirl. Perfect for breakfast, brunch, or a sweet snack!
Ingredients:
For the Bread:
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 1/2 cups fresh or frozen blueberries
For the Cream Cheese Swirl:
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
Instructions:
- Preheat oven: Preheat to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- Cream butter and sugar: In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in milk and vanilla extract.
- Combine batter: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Gently fold in the blueberries.
- Prepare cream cheese filling: In a separate bowl, beat cream cheese, sugar, egg, and vanilla until smooth and creamy.
- Layer the bread: Pour half of the bread batter into the prepared pan. Spread the cream cheese mixture evenly over the batter, then top with the remaining batter.
- Bake: Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. Cover with foil during the last 15 minutes if the top browns too quickly.
- Cool and serve: Let the bread cool in the pan for 10 minutes before transferring to a wire rack. Slice and enjoy!
