All the Warm, Cozy Flavor of a Pop-Tart in a Soft-Baked Cookie

Remember those warm, cinnamon-sweet brown sugar Pop-Tarts you toasted before school as a kid? This recipe brings that same comforting flavor into a soft-baked cookie form! These Brown Sugar Pop Tart-Inspired Cookies are everything you love about the classic breakfast treatโ€”rich brown sugar, warm cinnamon spice, and a soft center wrapped in a sugar-kissed crustโ€”all in one nostalgic, buttery bite.

They’re perfect for bake sales, after-school snacks, cozy weekend baking, or anytime you’re craving something warm, sweet, and cinnamon-kissed. And yes, thereโ€™s a cinnamon glazeโ€”because thatโ€™s non-negotiable.

Ingredients (Makes about 20 cookies)

For the Cookies:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup light brown sugar, packed
  • ยฝ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 ยพ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ยฝ teaspoon salt

For the Brown Sugar Filling:

  • ยฝ cup light brown sugar, packed
  • 2 teaspoons ground cinnamon
  • 1 tablespoon all-purpose flour
  • 1 tablespoon melted butter (to help bind)

For the Cinnamon Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ยฝ teaspoon ground cinnamon
  • ยฝ teaspoon vanilla extract

Instructions

1. Preheat and Prep

Preheat your oven to 350ยฐF (175ยฐC). Line two baking sheets with parchment paper and set aside.

2. Make the Cookie Dough

In a large bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy (about 2โ€“3 minutes). Add the eggs and vanilla extract; mix until fully combined.

In a separate bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.

Chill the dough for 30 minutes to help it firm up for shaping.

3. Make the Filling

In a small bowl, mix the brown sugar, cinnamon, flour, and melted butter until crumbly and combined.

4. Assemble the Cookies

Scoop dough into 2-tablespoon-sized balls. Flatten each ball slightly and create a small well in the center with your thumb.

Fill the center with 1 teaspoon of the brown sugar filling, then gently pinch the dough back over the top and roll into a ball to seal. Flatten slightly before placing on the baking sheet.

Bake for 10โ€“12 minutes, or until edges are lightly golden and centers are set. Let cool on the sheet for 5 minutes before transferring to a wire rack.

5. Add the Glaze

Whisk together powdered sugar, milk, cinnamon, and vanilla until smooth. Drizzle over the cooled cookies using a spoon or piping bag.

Let the glaze set before storing or serving.

Tips & Tricks

  • Want crisp edges? Bake an extra 1โ€“2 minutes.
  • For a Pop-Tart โ€œtoaster pastryโ€ look, shape the dough into rectangles, sandwich the filling, and crimp edges with a fork before baking.
  • Add a pinch of nutmeg or cardamom for extra warm spice.
  • These cookies freeze beautifully glazed or unglazedโ€”just thaw at room temp.

A Little Something From Me ๐Ÿชโœจ

As a kid, brown sugar cinnamon Pop-Tarts were a breakfast favoriteโ€”warm, sweet, and always satisfying. These cookies are a grown-up version of that childhood classic, made from scratch with real ingredients and a chewy texture that hits all the right notes. Theyโ€™re the kind of treat that takes you back with every bite.

Serve them with a cold glass of milk or a hot latte for the ultimate cozy experience. Trust meโ€”youโ€™ll want to double the batch.
