- 2 pounds boneless skinless chicken thighs

- 1 onion, diced
- 1 tablespoon grated fresh ginger
- 5 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon garam masala
- 1 teaspoon ground coriander
- ½ teaspoon chili powder
- ½ teaspoon turmeric
- 1 cinnamon stick
- ¾ teaspoon kosher salt (or to taste)
- ¼ cup chicken broth
- 14 ounces crushed tomatoes (1 can)
- 1 teaspoon granulated sugar
- 1 cup heavy whipping cream
Marinade:
- 2 tablespoons fresh lemon juice
- 2 teaspoons garam masala
- 1 tablespoon cumin
- 1 cup plain yogurt
Instructions:
- Marinate the chicken in the marinade for at least 30 minutes or overnight.
- Remove chicken from marinade, letting excess drip off. Brown the chicken in 1 tablespoon of oil over medium heat for about 6 minutes per side. Remove and set aside.
- In the same pan, melt butter and cook onions until tender. Add ginger, garlic, and spices, and cook until fragrant, about 1 minute.
- Add chicken broth, browned chicken, crushed tomatoes, and sugar. Simmer for 10 minutes, until slightly thickened. Add cream and cook for an additional 5-10 minutes.
