Ingredients:

  • 2 pounds boneless skinless chicken thighs
  • 3 tablespoons butter
  • 1 onion, diced
  • 1 tablespoon grated fresh ginger
  • 5 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon garam masala
  • 1 teaspoon ground coriander
  • ½ teaspoon chili powder
  • ½ teaspoon turmeric
  • 1 cinnamon stick
  • ¾ teaspoon kosher salt (or to taste)
  • ¼ cup chicken broth
  • 14 ounces crushed tomatoes (1 can)
  • 1 teaspoon granulated sugar
  • 1 cup heavy whipping cream

Marinade:

  • 2 tablespoons fresh lemon juice
  • 2 teaspoons garam masala
  • 1 tablespoon cumin
  • 1 cup plain yogurt

Instructions:

  1. Marinate the chicken in the marinade for at least 30 minutes or overnight.
  2. Remove chicken from marinade, letting excess drip off. Brown the chicken in 1 tablespoon of oil over medium heat for about 6 minutes per side. Remove and set aside.
  3. In the same pan, melt butter and cook onions until tender. Add ginger, garlic, and spices, and cook until fragrant, about 1 minute.
  4. Add chicken broth, browned chicken, crushed tomatoes, and sugar. Simmer for 10 minutes, until slightly thickened. Add cream and cook for an additional 5-10 minutes.
  5. Discard cinnamon stick and top with cilantro. Serve over rice for a full meal.
