These Butter Tart Squares are a simple twist on the classic Canadian dessert! With a buttery shortbread crust and a rich, gooey filling, they’re perfect for holidays, potlucks, or any sweet craving.
Ingredients
Crust:
- 1 cup all-purpose flour
- ¼ cup granulated sugar
- ½ cup unsalted butter, softened
Filling:
- 2 large eggs
- 1 cup packed brown sugar
- 2 tbsp all-purpose flour
- ½ tsp baking powder
- ½ tsp vanilla extract
- 1 cup raisins (optional)
- ½ cup chopped walnuts or pecans (optional)
Instructions
- Prepare the Crust:
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, leaving an overhang for easy removal.
- In a medium bowl, mix flour, sugar, and butter until crumbly. Press evenly into the bottom of the prepared dish. Bake for 10–12 minutes, or until lightly golden.
- Make the Filling:
- In a large bowl, whisk eggs, brown sugar, flour, baking powder, and vanilla extract until smooth. Stir in raisins and/or nuts if using.
- Assemble and Bake:
- Pour the filling over the pre-baked crust and spread evenly. Bake for 25–30 minutes, or until the filling is set and golden brown.
- Cool and Slice:
- Allow to cool completely in the pan before lifting out using the parchment paper. Slice into squares and serve.
Notes
- For a more traditional flavor, soak the raisins in warm water or rum for 10 minutes before adding them to the filling.
- These squares can be stored in an airtight container at room temperature for 2 days or refrigerated for up to a week.
- Freeze for up to 3 months—thaw before serving.
