Ingredients

For the Chicken

  • 1 ยฝ lbs (680 g) boneless chicken thighs (skin-on or skinless)
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar (or palm sugar)
  • 2 tbsp vegetable oil

For the Garlic Ginger Broth

  • 1 tbsp sesame oil
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 4 cups (960 ml) chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar

  • 2 cups cooked jasmine rice
  • 2 green onions, thinly sliced

  • Sesame seeds, for garnish

Instructions

Step 1: Caramelize the Chicken

  1. In a bowl, coat chicken thighs with 2 tbsp soy sauce.
  2. Heat vegetable oil in a skillet over medium heat.
  3. Add brown sugar and stir until it melts and starts to caramelize.
  4. Add chicken thighs and sear 4โ€“5 minutes per side until caramelized and cooked through. Remove and set aside.

Ingredients

Directions

  • Mix soy sauce + brown sugar, coat chicken, marinate 10 min.
  • Heat oil in a pan, sear chicken until caramelised. Remove.
  • Cook garlic + ginger in same pan 1 min.
  • Add broth, bring to simmer, return chicken, cook 10โ€“12 min.
