Ingredients
- 1/2 cup (115g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 1/2 cups (120g) shredded sweetened coconut
These bars are delightfully chewy with a golden, caramelized top and an irresistible coconut flavor in every bite!

Instructions
- Prepare the Pan: Preheat the oven to 350°F (175°C). Line an 8×8-inch (20×20 cm) baking pan with parchment paper, leaving an overhang for easy removal.
- Make the Batter: In a bowl, whisk together the melted butter and sugar until smooth. Add eggs and mix until well combined. Stir in the shredded coconut and 1/2 cup (60g) all-purpose flour until a thick batter forms.
- Bake: Pour the batter into the prepared pan and spread evenly. Bake for 25–30 minutes, or until the edges are golden brown and the center is set.
- Cool and Cut: Let the bars cool completely in the pan before lifting them out and slicing into squares.
Tips
- For extra flavor, add 1 tsp vanilla extract or a pinch of sea salt to the batter.
- Sprinkle the top with chocolate chips or chopped nuts before baking for a fun twist.
- Store the bars in an airtight container at room temperature for up to 3 days or in the fridge for a week.
