Ingredients

  • 2 cups cooked chicken, cut into small bite-sized pieces
  • 4 cups cooked pasta (penne, cavatappi, or rigatoni)
  • 3 tbsp butter
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tbsp flour
  • ½ cup sour cream
  • 1 cup milk
  • 3 cups grated cheese (cheddar, Colby jack, Swiss, or a mix)
  • ½ tsp red pepper flakes
  • Salt and black pepper, to taste

Instructions

  1. Preheat the oven to 350°F.
  2. In a skillet, melt butter over medium heat and sauté the onion and garlic until softened.
  3. Add the flour and cook for 1 minute, stirring constantly.
  4. Pour in the milk and sour cream, whisking until the mixture thickens. Stir in the cheese until it melts and the sauce is smooth.
  5. Season with red pepper flakes, salt, and pepper.
  6. Add the chicken and cooked pasta, stirring to combine.
  7. Transfer to a prepared 9×13-inch baking dish. Top with the reserved ½ cup cheese.
