Chicken Fettuccine Alfredo

Ingredients

For the Chicken:

  • 2 large chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

For the Alfredo Sauce:

  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg (optional)

For the Pasta:

  • 12 ounces fettuccine pasta
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

Step 1: Cook the Chicken

  1. Season the chicken breasts with garlic powder, Italian seasoning, salt, and black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 4–5 minutes per side, or until golden brown and cooked through (internal temperature of 165°F).
  3. Remove the chicken from the skillet, let it rest for 5 minutes, then slice it into thin strips.

Step 2: Cook the Pasta

  1. Bring a large pot of salted water to a boil. Cook the fettuccine according to the package instructions until al dente.
  2. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Step 3: Make the Alfredo Sauce

  1. In the same skillet used for the chicken, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  2. Stir in the heavy cream and bring it to a gentle simmer. Let it cook for 2–3 minutes.
  3. Reduce the heat to low and whisk in the Parmesan cheese until smooth and creamy. Season with salt, pepper, and nutmeg (if using).

Step 4: Combine Pasta, Sauce, and Chicken

  1. Add the cooked fettuccine to the skillet with the Alfredo sauce, tossing to coat. If the sauce is too thick, add a splash of reserved pasta water to thin it out.
  2. Add the sliced chicken on top and toss gently to combine.

Step 5: Garnish and Serve

  1. Serve the Chicken Fettuccine Alfredo hot, garnished with fresh parsley and additional Parmesan cheese if desired.

Notes

  • Cheese: Use freshly grated Parmesan for the best flavor and a smooth sauce. Pre-shredded cheese may not melt as well.
