  • 400g (14.5 oz) can diced tomatoes
  • 240ml (1 cup) chicken broth
  • 240g (1 cup) sour cream
  • 240g (1 cup) cream of mushroom soup
  • 170g (1 ½ cups) shredded cheddar cheese
  • 100g (1 cup) shredded mozzarella cheese
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp dried oregano

Instructions

Step 1: Cook the Chicken

  1. In a medium-sized pot, bring water to a boil and cook the chicken breasts until fully cooked, about 15-20 minutes. Alternatively, you can use leftover cooked chicken or rotisserie chicken.
  2. Once cooked, shred the chicken using two forks and set it aside.

Step 2: Prepare the Pasta

  1. While the chicken is cooking, bring a large pot of salted water to a boil.
  2. Add the spaghetti and cook according to the package directions until al dente. Drain and set aside.

Step 3: Sauté the Vegetables

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the onion and bell pepper, and sauté until softened, about 4-5 minutes.
  3. Add the minced garlic and cook for an additional 1 minute, until fragrant.

Step 4: Combine the Ingredients

  1. To the skillet, add the diced tomatoes, chicken broth, sour cream, and cream of mushroom soup. Stir until the mixture is well combined.
  2. Season with salt, pepper, paprika, and dried oregano, stirring again to evenly distribute the seasonings.
  3. Let the mixture simmer for about 5 minutes, allowing the flavors to meld together.

Step 5: Assemble the Chicken Spaghetti

  1. Add the cooked shredded chicken to the skillet and stir to combine with the sauce.
  2. Add the cooked spaghetti to the skillet and toss to coat the pasta in the creamy sauce.

Step 6: Add Cheese and Bake (Optional)
