These Chickpea Vegetable Nuggets are packed with veggies and plant-based protein! Perfect as finger food, meatball substitutes, or served with your favorite dipping sauce, they’re a family-friendly, easy-to-make dish that everyone will love.
Ingredients
- 15 ounces canned chickpeas, drained and rinsed
- ½ cup grated zucchini
- ½ cup grated carrot
- ¼ cup minced onion
- ½ tablespoon Italian seasoning
- 1 teaspoon sea salt
- 1–2 cloves garlic, minced (or ½ teaspoon garlic powder)
- Black pepper, to taste
- ¼ teaspoon paprika
- 2 large eggs
- 1 teaspoon olive or avocado oil, plus extra for cooking
- ½ cup oat flour or breadcrumbs
Instructions
- Prep the Vegetables:
- Place the grated zucchini and carrots in a clean dish towel or large paper towel. Wrap and squeeze to remove excess moisture.
- Blend the Mixture:
- In a food processor, combine the drained zucchini, carrots, chickpeas, and all remaining ingredients. Pulse a few times to combine. The mixture should be wet but scoopable—avoid over-mixing.
- Heat the Pan:
- Heat a teaspoon of cooking oil in a large skillet over medium-high heat.
- Form the Nuggets:
- Use a heaping tablespoon or a small cookie scoop to portion the mixture into the pan. Cook for 3–5 minutes, then flip and gently flatten with the back of a spatula. Cook another 3–5 minutes until golden on both sides.
- Serve and Enjoy:
- Serve warm with your favorite dipping sauce. Store leftovers in an airtight container in the refrigerator for 4–5 days.
Notes
- Vegan Option: Replace the eggs with flax eggs (1 tablespoon ground flaxseed + 2.5 tablespoons water per egg).
- Air Fryer Method: Cook at 400°F for 12 minutes, flipping halfway through.
- Make Ahead: These nuggets freeze well. Reheat in an oven or air fryer for crispy results.
