Ingredients
For the Cookies:
- 1 cup peanut butter
- 1/2 cup unsalted butter, softened
- 1/2 cup shortening
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- Additional granulated sugar for rolling
For the Chocolate Coating:
- 3 cups chocolate chips (milk, semi-sweet, or a mix)
- 1 tablespoon shortening
- Sprinkles, crushed peanuts, or both

- Prepare the Dough:
In the bowl of a stand mixer with a paddle attachment, cream together peanut butter, butter, and shortening for 1 minute. Add granulated sugar, brown sugar, baking soda, and baking powder. Beat until combined, scraping the sides as needed. Incorporate eggs and vanilla, then gradually mix in the flour until just combined. Cover the dough and chill for 1 hour. - Bake the Cookies:
Preheat your oven to 375°F (190°C). Shape the dough into 1 1/4-inch balls and roll them in granulated sugar. Place them 2 inches apart on an ungreased baking sheet. Flatten each ball with a fork to create grooves. Bake for 7-9 minutes, or until lightly browned. Cool on the baking sheet for 1 minute before transferring to a wire rack. - Decorate the Cookies:
Melt chocolate chips and shortening in a double boiler until smooth. Line your countertop with wax paper. Place sprinkles and crushed peanuts in bowls. Dip half of each cooled cookie into the melted chocolate, then coat the dipped edge with sprinkles or peanuts. Set on wax paper to cool and harden.
