Description

If you’re a chocolate lover, this Chocolate Mousse Brownies recipe is a dream come true. Imagine a rich, fudgy brownie base topped with a silky-smooth layer of chocolate mousse, finished with a cloud of whipped cream or a dusting of cocoa powder. These brownies strike the perfect balance between decadent and elegant, making them ideal for dinner parties, holidays, or whenever you want to treat yourself. The contrast between the chewy brownie and airy mousse creates a texture that feels indulgent yet light, ensuring every bite melts in your mouth.

Ingredients

For the Brownie Base

  • 1 cup (225 g) unsalted butter
  • 8 oz (225 g) semi-sweet chocolate, chopped
  • 1 ½ cups (300 g) granulated sugar
  • 4 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 cup (125 g) all-purpose flour
  • ¼ cup (30 g) unsweetened cocoa powder
  • ½ tsp salt

For the Chocolate Mousse Layer

  • 6 oz (170 g) semi-sweet chocolate, chopped
  • 2 tbsp (30 g) unsalted butter
  • 3 large eggs, separated
  • ¼ cup (50 g) granulated sugar
  • 1 cup (240 ml) heavy cream, cold

For the Topping (Optional)

  • 1 cup (240 ml) heavy cream, whipped
  • 2 tbsp powdered sugar
  • Cocoa powder or chocolate shavings for garnish

Instructions

Step 1: Make the Brownies

  1. Preheat oven to 350°F (175°C). Grease and line a 9×13-inch (23×33 cm) baking pan with parchment paper.
  2. Melt butter and chocolate together in a heatproof bowl over simmering water (double boiler) or in the microwave in 30-second intervals, stirring until smooth.
  3. Whisk in sugar, then add eggs one at a time, mixing well after each addition. Stir in vanilla.
  4. Sift in flour, cocoa powder, and salt. Gently fold until just combined.
  5. Pour batter into the prepared pan and bake for 25–30 minutes, until the center is set but slightly fudgy. Let cool completely.

Step 2: Make the Chocolate Mousse

  1. Melt chocolate and butter together in a heatproof bowl. Set aside to cool slightly.
  2. In a clean bowl, beat egg yolks with half the sugar until pale and thick. Stir into the melted chocolate.
  3. In another bowl, beat egg whites until soft peaks form, then gradually add remaining sugar until glossy stiff peaks form.
  4. In a separate chilled bowl, whip heavy cream until soft peaks form.
  5. Fold whipped cream into the chocolate mixture, then gently fold in egg whites until no streaks remain.

Step 3: Assemble

  1. Spread the mousse evenly over the cooled brownie layer.
  2. Cover and refrigerate for at least 4 hours (or overnight) until set.

Step 4: Add Topping

  1. Before serving, whip the cream with powdered sugar until soft peaks form.
  2. Spread or pipe over the mousse layer.
  3. Dust with cocoa powder or sprinkle with chocolate shavings.
  4. Slice into squares and serve chilled.

Tips & Tricks

  • For extra fudgy brownies, slightly underbake them by a minute or two.
  • Chill the mousse-covered brownies overnight for the best texture.
  • Run a sharp knife under hot water, then wipe dry before cutting for clean slices.
  • Add a splash of espresso to the brownie batter for a mocha twist.

Variations

  • Nutty Crunch: Stir chopped walnuts, hazelnuts, or pecans into the brownie batter.
  • Mint Chocolate: Add peppermint extract to the mousse for a festive flavor.
  • Dark Chocolate Lovers: Use bittersweet chocolate (70%) for a more intense taste.
  • Layered Dessert Cups: Assemble brownies, mousse, and cream in glasses for a parfait-style treat.

FAQs

Q: Can I make this ahead of time?
Yes! These brownies actually taste better when chilled overnight, so they’re perfect for make-ahead desserts.

Q: How long will they last in the fridge?
They keep well for up to 4 days in an airtight container in the refrigerator.

Q: Can I freeze Chocolate Mousse Brownies?
Yes, freeze them (without whipped cream topping) for up to 2 months. Thaw overnight in the fridge before serving.

Q: Can I use boxed brownie mix?
Absolutely! If you’re short on time, bake a boxed brownie mix as the base and just make the mousse layer from scratch.

Serving Suggestions

  • Serve chilled with fresh berries for a fruity contrast.
  • Drizzle with caramel or raspberry sauce for added elegance.
