- 1/4 cup (50g) granulated sugar
- 1 tsp cinnamon
- 1 cup (240ml) heavy whipping cream

Instructions
Make the Cake:
- Preheat Oven: Preheat your oven to 375°F (190°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
- Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, and cinnamon.
- Beat Eggs and Sugar: In a large bowl, beat the eggs and sugar together until thick and pale, about 5 minutes. Gently fold in the dry ingredients.
- Bake: Pour the batter into the prepared pan and spread evenly. Bake for 10–12 minutes, or until the cake springs back when touched.
- Roll the Cake: Turn the warm cake out onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper. Roll the cake tightly in the towel and let it cool completely.
