- 1 1/2 cups graham cracker crumbs (about 9 whole crackers)
- 3 tablespoons granulated sugar
Filling:
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon pure vanilla extract
- 1 container (8 ounces) Cool Whip
- 1 can (21 ounces) cherry pie filling

Instructions
- Prepare the Crust:
- In a medium bowl, melt the butter in the microwave for 30 seconds.
- Add the graham cracker crumbs and sugar to the melted butter, mixing well.
- Pat the crumb mixture firmly into the bottom of a sprayed 8×8 baking dish. Set aside.
- Prepare the Filling:
- Beat the cream cheese in a large bowl with a mixer until smooth and free of lumps.
- Add the powdered sugar and vanilla extract, mixing until well combined.
- Fold in the Cool Whip until everything is well incorporated but don’t overmix.
- Spread the cream cheese mixture evenly over the graham cracker crust using a spoon or offset spatula.
- Top and Refrigerate:
- Spoon the cherry pie filling over the cream cheese mixture and spread it evenly.
- Refrigerate for at least 2 hours (overnight is best) before serving.
- Serve:
- Serve chilled. Refrigerate any leftovers.
Tips:
- For easy removal, place the pan in hot water for about a minute, covering just the bottom and a tiny bit of the sides. This will help loosen the crust for easy serving.
