These Confetti Squares are a no-bake classic! Chewy, sweet, and colorful, they’re made with peanut butter, butterscotch chips, and mini marshmallows. A nostalgic treat perfect for parties, holidays, or a quick dessert fix.
Ingredients
- ½ cup unsalted butter
- 1 cup peanut butter (smooth or crunchy)
- 1 (11 oz) bag butterscotch chips (about 1 ½ cups)
- 1 (10 oz) bag mini rainbow marshmallows
Instructions
- Prepare the Pan:
- Line an 8×8-inch or 9×9-inch baking dish with parchment paper, leaving an overhang for easy removal.
- Melt the Mixture:
- In a large saucepan over low heat, melt the butter, peanut butter, and butterscotch chips, stirring frequently until smooth. Remove from heat and let cool for 5–10 minutes to avoid melting the marshmallows.
- Add the Marshmallows:
- Fold in the mini marshmallows, ensuring they are evenly coated with the peanut butter mixture.
- Press into the Pan:
- Transfer the mixture to the prepared pan. Use a spatula to press it down evenly.
- Chill and Slice:
- Refrigerate for at least 2 hours, or until firm. Use the parchment overhang to lift the bars out of the pan, then slice into squares.
Notes
- For extra flavor, add a handful of chopped nuts or shredded coconut.
- Use seasonal-colored marshmallows for a festive twist.
