  • 4 cups (1 L) beef broth
  • 2 medium potatoes, peeled and diced
  • 1 medium carrot, diced
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp salt (to taste)
  • ½ tsp black pepper
  • 1 tbsp olive oil (if needed)

Instructions

  1. Cook the Beef: In a large Dutch oven or soup pot, cook ground beef over medium heat until browned. Drain excess fat if necessary.
  2. Sauté Aromatics: Add chopped onion and garlic to the pot, cooking until softened, about 3 minutes.
  3. Add Vegetables & Beans: Stir in diced tomatoes, Rotel, beans, corn, potatoes, and carrot. Mix well.
