🧂 Ingredients

For the Meatloaf:

  • 2 lbs (900 g) ground beef (80/20 for juiciness)
  • 1 cup (90 g) breadcrumbs
  • 1/2 cup (120 ml) milk
  • 2 eggs, lightly beaten
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup (60 ml) ketchup
  • 2 tsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme (optional)

For the Glaze:

  • 1/2 cup (120 ml) ketchup
  • 2 tbsp brown sugar
  • 1 tsp Dijon mustard
  • 1/2 tsp smoked paprika (optional)

🍳 Instructions

Step 1: Preheat & Prep

  1. Preheat oven to 350°F (175°C).
  2. Line a loaf pan with parchment paper or lightly grease it.

Step 2: Make the Meatloaf Mixture

  1. In a large bowl, combine ground beef, breadcrumbs, milk, eggs, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, and thyme.
  2. Mix gently with your hands or a spoon until just combined — don’t overmix to keep the meatloaf tender.

Step 3: Shape & Glaze

  1. Transfer the mixture to the prepared loaf pan and shape into a loaf.
  2. In a small bowl, mix ketchup, brown sugar, Dijon mustard, and smoked paprika for the glaze.
  3. Spread half of the glaze evenly over the top of the meatloaf.

Step 4: Bake

  1. Bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).
  2. Spread the remaining glaze over the meatloaf in the last 10 minutes of baking for a sweet, tangy finish.

Step 5: Rest & Serve

  • Let the meatloaf rest for 10 minutes before slicing.
  • Serve with mashed potatoes, green beans, or roasted vegetables.
