Rich, cheesy, and ultra-comforting, this Creamy Broccoli Pasta is a one-pot wonder that comes together in just 25 minutes! The perfect blend of comfort and nutrition in every forkful.

๐Ÿ“ Description

If you love easy, comforting meals with minimal cleanup, this One-Pot Creamy Broccoli Pasta is about to become a new favorite. Made with tender pasta, fresh broccoli florets, and a silky, cheesy cream sauce โ€” all cooked in a single pot โ€” itโ€™s a perfect balance of cozy and wholesome.

This dish is great for busy weeknights, meatless Mondays, or any time youโ€™re craving something creamy and satisfying without the fuss. Best of all, it uses pantry staples and fresh ingredients you likely already have on hand!

๐Ÿง‚ Ingredients (U.S. Standard Measurements)

  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 3 cups broccoli florets (fresh or frozen)
  • 2 1/2 cups vegetable broth (or chicken broth)
  • 2 cups milk (whole or 2%)
  • 12 oz uncooked pasta (penne, fusilli, or rotini work well)
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella or cheddar cheese
  • Optional: lemon zest, extra Parmesan for serving

๐Ÿณ Instructions

1. Sautรฉ the Garlic

In a large pot or deep skillet, melt the butter over medium heat. Add the minced garlic and cook for 30 seconds until fragrant.

2. Add Broccoli & Liquids

Stir in the broccoli florets, broth, milk, salt, pepper, and red pepper flakes (if using). Bring to a gentle simmer.

3. Add Pasta

Add the uncooked pasta directly to the pot. Stir well to make sure it doesnโ€™t stick together.

4. Simmer

Reduce heat to medium-low. Simmer uncovered for 10โ€“12 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed.

5. Stir in Cheese

Turn off the heat. Stir in the Parmesan and mozzarella until the sauce is creamy and smooth. If desired, add a touch of lemon zest to brighten the flavors.

6. Serve

Serve hot, garnished with extra cheese or fresh cracked pepper.

๐Ÿ” Variation (From Me!)

๐Ÿฅ“ Creamy Bacon Broccoli Pasta

Add 4โ€“5 slices of crispy cooked bacon, chopped, just before stirring in the cheese. It brings a salty, smoky crunch that pairs beautifully with the creamy sauce.

๐Ÿง  Tips & Tricks

  • Use short pasta shapes that hold sauce well (like fusilli or penne).
  • Frozen broccoli works great โ€” no need to thaw, just add it to the pot.
  • Add grilled chicken or rotisserie chicken for extra protein.
  • For a thinner sauce, stir in a splash more milk at the end.
  • Want it extra creamy? Add a tablespoon of cream cheese or sour cream with the cheese.
