Ingredients

For the Pasta:

  • 12 oz (340 g) fettuccine or your favorite pasta
  • 1 teaspoon salt (for pasta water)

For the Chicken:

  • 2 large boneless, skinless chicken breasts
  • 1 teaspoon salt
  • ยฝ teaspoon black pepper
  • ยฝ teaspoon garlic powder
  • 1 tablespoon olive oil

For the Sauce:

  • 4 slices bacon, chopped
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped (oil-packed or rehydrated)
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • ยฝ teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Optional: pinch of red pepper flakes for heat

Instructions

1. Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook pasta according to package instructions until al dente.
  3. Drain and set aside, reserving ยฝ cup of pasta water.

2. Cook the Chicken

  1. Season chicken breasts with salt, pepper, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Cook chicken for 5โ€“6 minutes per side, or until golden brown and cooked through.
  4. Remove from the skillet, let rest for 5 minutes, then slice into strips.

3. Prepare the Sauce

  1. In the same skillet, cook chopped bacon over medium heat until crispy. Remove and set aside.
  2. Add minced garlic to the bacon fat and sautรฉ for 1 minute until fragrant.
  3. Stir in sun-dried tomatoes and cook for 2โ€“3 minutes.
  4. Reduce heat to low and pour in heavy cream. Stir gently and simmer for 3โ€“4 minutes.
  5. Add Parmesan cheese and Italian seasoning, stirring until smooth.
  6. Season with salt, pepper, and optional red pepper flakes.

4. Combine Pasta and Chicken

  1. Add cooked pasta to the sauce, tossing to coat evenly.
  2. Fold in fresh spinach and cooked bacon. Let spinach wilt slightly.
  3. Top with sliced chicken and toss gently. If the sauce is too thick, add a splash of reserved pasta water.

5. Serve

  • Garnish with extra Parmesan cheese and fresh parsley.
  • Serve immediately with garlic bread or a fresh green salad.

Tips

  • Cheese: Use freshly grated Parmesan for a smoother, richer sauce.
  • Pasta Water: Adding reserved pasta water helps loosen the sauce and ensures it coats every strand of pasta.
  • Chicken: Let the chicken rest after cooking to keep it juicy.
  • Sun-Dried Tomatoes: Oil-packed sun-dried tomatoes add extra flavor, but if using dry, rehydrate in hot water for 10 minutes.

Variations

  • Vegetarian: Skip the chicken and bacon, and add mushrooms or roasted red peppers instead.
  • Spicy: Add ยฝ teaspoon crushed red pepper flakes or a dash of hot sauce.
  • Different Pasta: Try penne, linguine, or even gluten-free pasta.
  • Creamy Twist: Mix in a little cream cheese for an extra velvety texture.

FAQs

Q: Can I make this ahead of time?
A: Yes, but itโ€™s best served fresh. You can prep chicken and sauce in advance, then reheat gently while cooking pasta.

Q: Can I freeze this pasta?
A: Itโ€™s not recommended to freeze creamy pasta as the sauce can separate. Best to enjoy immediately.

Q: Can I use pre-cooked chicken?
A: Absolutely! Just add it to the sauce at the end to warm through.
