Ingredients
- 1 lb ground beef (hamburger)
- 6 cups potatoes, peeled and diced (about 4-5 medium potatoes)

- 4 cups chicken broth

- 2 cups heavy cream
- 1 cup shredded cheddar cheese (optional)

Instructions
1. Brown the Ground Beef
- In a skillet, heat 1 tablespoon olive oil over medium-high heat.
- Add the ground beef and cook until browned, breaking it apart with a spoon.
- Drain any excess fat, then transfer the cooked beef to the crockpot.
2. Add the Ingredients to the Crockpot
- Add the diced potatoes, onion, garlic, and carrots (optional) to the crockpot.
- Pour in the chicken broth and season with salt, pepper, thyme, and paprika. Stir to combine.
3. Cook the Soup
