Creamy Potato & Hamburger Soup Made in the Crockpot

This Creamy Potato & Hamburger Soup is the perfect comfort food for chilly days. With its rich, creamy texture and hearty ingredients, it’s a one-pot wonder that can be made effortlessly in the crockpot. The combination of tender potatoes, savory hamburger, and a creamy base makes it a filling and satisfying meal for the whole family.


Ingredients

  • 1 lb ground beef (hamburger)
  • 6 cups potatoes, peeled and diced (about 4-5 medium potatoes)
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 4 cups chicken broth
  • 1/2 cup carrots, diced (optional)
  • 2 cups heavy cream
  • 1 cup shredded cheddar cheese (optional)
  • Salt and pepper, to taste
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1 tablespoon olive oil (for browning beef)

Instructions

1. Brown the Ground Beef

  • In a skillet, heat 1 tablespoon olive oil over medium-high heat.
  • Add the ground beef and cook until browned, breaking it apart with a spoon.
  • Drain any excess fat, then transfer the cooked beef to the crockpot.

2. Add the Ingredients to the Crockpot

  • Add the diced potatoes, onion, garlic, and carrots (optional) to the crockpot.
  • Pour in the chicken broth and season with salt, pepper, thyme, and paprika. Stir to combine.

3. Cook the Soup

  • Cover the crockpot and cook on low for 6-7 hours, or on high for 3-4 hours, until the potatoes are tender and fully cooked.

4. Add Cream and Cheese

  • Once the potatoes are cooked, add the heavy cream to the crockpot and stir to combine.
  • If you’re using cheddar cheese, add it now and stir until melted and incorporated into the soup.

5. Adjust Seasoning

  • Taste and adjust the seasoning with more salt and pepper if needed.

6. Serve and Enjoy

  • Ladle the creamy soup into bowls and garnish with extra shredded cheese, fresh herbs, or crumbled bacon if desired.
