Ingredients
For the Gnocchi:

For the Creamy Spinach and Mushroom Sauce:

✅ 2 tablespoons olive oil
✅ 1 small onion (finely chopped)
✅ 2 cloves garlic (minced)
✅ 8 oz (225g) mushrooms (sliced)
✅ 4 oz fresh spinach (roughly chopped)
✅ 1 cup heavy cream
✅ 1 cup vegetable or chicken broth
✅ ½ cup grated Parmesan cheese
✅ Salt and black pepper (to taste)
✅ Fresh parsley (for garnish)
Instructions
Step 1: Cook the Gnocchi
1️⃣ Bring a large pot of salted water to a boil.
2️⃣ Add the gnocchi and cook according to the package instructions, usually for about 2-3 minutes or until they float to the surface.
3️⃣ Drain the gnocchi, reserving about 1/2 cup of the pasta water. Set aside.
