Ready in 30 Minutes

Description

This Creamy Tuscan Shrimp Pasta is a restaurant-style meal you can make at home in just 30 minutes! Juicy shrimp are tossed in a rich, garlicky cream sauce with sun-dried tomatoes, spinach, and Parmesan cheese, then served over perfectly cooked pasta. Bursting with flavor, this dish is elegant enough for date night yet simple enough for a weeknight dinner. Itโ€™s creamy, savory, and absolutely irresistible!

Ingredients

  • 250 g (8โ€“9 oz) pasta (fettuccine, linguine, or penne)
  • 450 g (1 lb) large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • ยฝ cup sun-dried tomatoes, chopped
  • 2 cups fresh baby spinach
  • 1 cup heavy cream
  • ยฝ cup grated Parmesan cheese
  • ยฝ teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta
Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain, reserving ยฝ cup pasta water, and set aside.
  2. Cook the shrimp
Heat olive oil in a large skillet over medium-high heat. Season shrimp with salt and pepper and cook 2โ€“3 minutes per side, until pink and opaque. Remove shrimp from skillet and set aside.
  3. Make the creamy sauce
In the same skillet, add garlic and sautรฉ for 30 seconds until fragrant. Stir in sun-dried tomatoes and red pepper flakes. Pour in heavy cream and bring to a gentle simmer. Add Parmesan cheese and stir until smooth.
  4. Add spinach and combine
Add fresh spinach and cook until wilted. Return cooked shrimp to the skillet. Toss to coat everything in the creamy sauce.
  5. Combine with pasta
Add cooked pasta to the skillet and toss to combine. Use reserved pasta water to loosen the sauce if needed.
  6. Serve
Garnish with fresh parsley and extra Parmesan cheese. Serve immediately.

Tips for the Best Creamy Tuscan Shrimp Pasta

  • Donโ€™t overcook shrimpโ€”they cook quickly and continue cooking in the sauce.
  • Use fresh spinach for vibrant color and flavor.
  • Adjust red pepper flakes for desired spice level.
  • Reserve pasta water to adjust sauce consistency perfectly.

Variations

  • Low-Carb: Serve over zucchini noodles or spaghetti squash.
  • Vegetable Boost: Add mushrooms, bell peppers, or cherry tomatoes.
  • Cheesy Upgrade: Add mozzarella or cream cheese for extra creaminess.
  • Protein Swap: Substitute shrimp with chicken or scallops.
