- 4 cups Yukon Gold potatoes, peeled and diced
- 4 cups vegetable broth

- 2 cloves garlic, minced
- 1 tsp thyme (fresh or dried)
- 1/2 tsp salt
- 1/4 tsp black pepper
- Chopped fresh chives (for garnish)
Instructions
- Prepare the leeks:
- Slice the leeks lengthwise, then chop into thin slices. Rinse thoroughly under cold water to remove dirt and grit.
- Sauté the leeks and garlic:
- In a large pot, heat olive oil or vegan butter over medium heat. Add the leeks and cook for 5–7 minutes until softened, stirring occasionally. Add minced garlic and thyme, cooking for 1 more minute.
