  • 4 tablespoons oil or melted ghee
  • ยฝ cup (120 ml) water (adjust as needed)

For the Onion Filling

  • 2 large onions, finely chopped
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon grated ginger
  • 2 cloves garlic, minced
  • 1โ€“2 green chilies, finely chopped (optional, adjust to taste)
  • ยฝ teaspoon turmeric powder
  • ยฝ teaspoon garam masala
  • ยฝ teaspoon red chili powder (optional)
  • Salt to taste
  • Fresh cilantro, chopped (optional)

For Frying

  • Oil for deep frying

Instructions

  1. Prepare the Dough
In a large bowl, mix flour and salt. Add oil or ghee and rub into the flour until crumbly. Gradually add water and knead into a firm, smooth dough. Cover with a damp cloth and set aside for 20โ€“30 minutes.
  2. Prepare the Onion Filling
Heat oil in a skillet over medium heat. Add cumin seeds and let them sizzle for a few seconds. Add ginger, garlic, and green chilies; sautรฉ for 1โ€“2 minutes. Add onions, turmeric, garam masala, red chili powder, and salt. Cook until onions are soft and lightly golden. Stir in chopped cilantro if using. Remove from heat and let the filling cool.
  3. Shape the Samosas
Divide dough into small balls. Roll each ball into a thin oval or circle. Cut in half to form semi-circles. Fold each semi-circle into a cone shape and seal the edge with water. Fill the cone with the onion mixture and seal the top carefully.
  4. Fry the Samosas
Heat oil in a deep frying pan over medium heat. Fry samosas in batches until golden brown and crispy, about 3โ€“5 minutes per side. Drain on paper towels.
  5. Serve
Serve hot with mint chutney, tamarind sauce, or ketchup.

Tips & Tricks

  • Firm dough: Ensure the dough is firm but pliable; too soft dough can tear while frying.
  • Donโ€™t overcrowd the pan: Fry in batches for even cooking.
  • Drain excess oil: Use paper towels to keep samosas crispy.
  • Adjust spices: Modify heat and spice levels according to your preference.

Variations

  • Potato & Pea Samosa: Add boiled and mashed potatoes with peas to the onion filling.
  • Spicy Onion Samosa: Add extra green chilies or red chili powder for heat.
  • Baked Samosa: Brush with oil and bake at 375ยฐF (190ยฐC) for 20โ€“25 minutes for a healthier version.
  • Cheese Samosa: Add shredded vegan or regular cheese to the filling for a creamy twist.
