Ingredients:

  • 2 lbs (900g) beef sirloin or flank steak, thinly sliced
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 cloves garlic, minced
  • 1/2 cup beef broth
  • 1/3 cup soy sauce (low-sodium recommended)
  • 1/4 cup brown sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon water (to mix with cornstarch)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon black pepper
  • Optional: 1/2 teaspoon crushed red pepper flakes for a spicy kick

Instructions:

  1. Prepare the Beef and Vegetables: Place the sliced beef, onion, and bell peppers into the crock pot.
  2. Make the Sauce: In a medium bowl, whisk together the beef broth, soy sauce, brown sugar, Worcestershire sauce, garlic, black pepper, and red pepper flakes (if using). Pour the sauce over the beef and vegetables.
  3. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the flavors are well combined.
  4. Thicken the Sauce (Optional): If you prefer a thicker sauce, mix the cornstarch with water to create a slurry. Stir it into the crock pot during the last 30 minutes of cooking, allowing the sauce to thicken.
  5. Serve: Serve the pepper steak hot over steamed rice, noodles, or mashed potatoes. Garnish with fresh parsley or green onions if desired.
