Ingredients:
- 2 lbs (900g) beef sirloin or flank steak, thinly sliced
- 1 medium onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 cloves garlic, minced
- 1/2 cup beef broth
- 1/3 cup soy sauce (low-sodium recommended)
- 1/4 cup brown sugar
- 2 tablespoons cornstarch
- 1 tablespoon water (to mix with cornstarch)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon black pepper
- Optional: 1/2 teaspoon crushed red pepper flakes for a spicy kick
Instructions:
- Prepare the Beef and Vegetables: Place the sliced beef, onion, and bell peppers into the crock pot.
- Make the Sauce: In a medium bowl, whisk together the beef broth, soy sauce, brown sugar, Worcestershire sauce, garlic, black pepper, and red pepper flakes (if using). Pour the sauce over the beef and vegetables.
- Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the flavors are well combined.
- Thicken the Sauce (Optional): If you prefer a thicker sauce, mix the cornstarch with water to create a slurry. Stir it into the crock pot during the last 30 minutes of cooking, allowing the sauce to thicken.
- Serve: Serve the pepper steak hot over steamed rice, noodles, or mashed potatoes. Garnish with fresh parsley or green onions if desired.
