This no-fuss Crockpot Chicken Noodle Soup is packed with tender chicken, hearty vegetables, slurp-worthy noodles, and a rich, savory broth. Just toss everything in your slow cooker and come back to a warm, nourishing meal ready to enjoy.


🛒 Ingredients (Serves 6)

  • Boneless, skinless chicken breasts or thighs – 500g
  • Carrots – 200g, sliced
  • Celery – 150g, chopped
  • Onion – 1 medium (150g), diced
  • Garlic – 3 cloves (9g), minced
  • Egg noodles – 150g, uncooked
  • Chicken broth (low sodium) – 1.5 liters
  • Bay leaf – 1
  • Dried thyme – 1 tsp
  • Dried parsley – 1 tsp
  • Salt – 1 tsp, or to taste
  • Black pepper – ½ tsp
  • Olive oil – 1 tbsp (optional, for sautéing vegetables)
  • Lemon juice – 1 tbsp, optional, for brightness

👨‍🍳 Instructions

1. Prep the Ingredients

If you like, you can quickly sauté the onion, carrots, celery, and garlic in olive oil for 3–5 minutes for added flavor (optional step).

2. Add Everything to Crockpot

In your crockpot, combine:

  • Chicken
  • Carrots, celery, onion, and garlic
  • Chicken broth
  • Bay leaf, thyme, parsley, salt, and pepper

3. Cook

  • HIGH for 3–4 hours

4. Shred the Chicken

6. Finish & Serve
