Ingredients:
- 1 lb (450g) ground beef
- 1 packet taco seasoning mix
- 1/4 cup water
- 6 cups chopped romaine or iceberg lettuce
- 2 cups cherry tomatoes, halved
- 1 cup canned black beans, rinsed and drained
- 1 cup shredded cheddar cheese
- 1/2 cup diced red onion
- 1 cup corn kernels (fresh, canned, or frozen and thawed)
- 2 cups Nacho Cheese Doritos, crushed
- 1 cup Catalina or French dressing
Optional Toppings:
- Sliced black olives
- Sour cream
- Guacamole
- Salsa
Instructions:
- Cook the Ground Beef: In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat. Add the taco seasoning and water, stirring to combine. Cook for 2-3 minutes until the mixture thickens. Remove from heat and let cool slightly.
- Prepare the Salad: In a large salad bowl, layer the chopped lettuce, cherry tomatoes, black beans, shredded cheese, red onion, and corn.
- Assemble the Salad: Add the cooked taco meat to the salad. Just before serving, toss in the crushed Doritos and drizzle the Catalina dressing over the top. Mix gently to combine.
- Serve: Top with optional toppings like sour cream, guacamole, or salsa for extra flavor. Serve immediately for the best texture and taste.
