Ingredients
- 5 Persian cucumbers
- 1/2 tsp salt
- 1/2 tbsp sesame oil
- 3/4 tbsp light soy sauce
- 1 tbsp sugar
- 3/4 tbsp rice vinegar
- 1 tbsp chili oil
- 1/2 tbsp sesame seeds
Directions
- Rinse the cucumbers and slice off one end at an angle. Continue slicing the cucumbers at an angle so that the slices are oval-shaped. Adjust the thickness to your preference.
- Place the cucumber slices in a bowl and sprinkle with 1/2 teaspoon of salt. Mix well, then refrigerate for at least 20 minutes to draw out excess water.
- After 20 minutes, drain the cucumbers and give them a quick rinse for about 10 seconds to remove excess salt.
- Return the cucumbers to the bowl, then add sesame oil, soy sauce, sugar, rice vinegar, chili oil, and sesame seeds.
- Stir until all ingredients are well combined.
- Serve immediately or refrigerate for later. Enjoy this deliciously tangy salad!
