Butter Chicken (Murgh Makhani) is a rich, creamy, and mildly spiced Indian curry made with tender chicken cooked in a buttery tomato sauce. This easy version delivers restaurant-quality flavors in under 30 minutes using simple ingredients. Serve it with naan or rice for a comforting meal!
Ingredients
For the Chicken:
- 1 lb (450g) boneless, skinless chicken breast or thighs (cubed)
- 2 tbsp plain yogurt
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1 tsp garam masala
- ½ tsp turmeric
- ½ tsp salt
- ½ tsp chili powder
- 1 tbsp oil
For the Butter Chicken Sauce:
- 2 tbsp butter
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 1 tsp ginger paste
- 1 tsp garam masala
- ½ tsp cumin
- ½ tsp paprika (for color)
- 1 ½ cups tomato puree (or canned crushed tomatoes)
- ½ cup heavy cream (or coconut milk for dairy-free)
- 1 tbsp honey or sugar (optional)
- ½ tsp salt (adjust to taste)
- ¼ cup water (as needed)
For Garnish:
- 1 tbsp butter (for finishing)
- ¼ cup fresh cilantro (chopped)
Instructions
Step 1: Marinate the Chicken
- In a bowl, mix chicken with yogurt, ginger, garlic, garam masala, turmeric, salt, and chili powder. Let it marinate for at least 15 minutes (or overnight for better flavor).
Step 2: Cook the Chicken
- Heat 1 tbsp oil in a pan over medium heat. Add the marinated chicken and cook for 5-7 minutes, until golden brown. Remove and set aside.
Step 3: Make the Butter Sauce
- In the same pan, melt 2 tbsp butter. Add onions and cook until soft.
- Stir in garlic, ginger, garam masala, cumin, and paprika. Sauté for 30 seconds.
- Pour in tomato puree and let it simmer for 5 minutes until thickened.
Step 4: Blend & Finish the Sauce
- Blend the sauce for a smooth texture (optional).
- Stir in cream, honey, salt, and ¼ cup water if needed. Simmer for 2 minutes.
- Add the cooked chicken back and let it simmer for 5 minutes.
Step 5: Garnish & Serve
- Finish with 1 tbsp butter for richness. Garnish with fresh cilantro.
- Serve hot with naan or basmati rice!
