This quick and delicious Chicken Fried Rice comes together in just 30 minutes! With tender chicken, fresh veggies, and flavorful seasonings, it’s perfect for busy weeknights.
Ingredients
- 1 tbsp oil
- 2 large chicken breasts, diced into bite-sized pieces (pat dry for best results)
- 2 large onions, peeled and diced
- 3 medium carrots, peeled, trimmed, and diced
- 1 red bell pepper, cored and diced
- 3 cups cooked and chilled rice (long-grain recommended, from 1 cup uncooked)
- 3 tbsp low-sodium soy sauce
- 1 tbsp maple syrup
- 2 large eggs, beaten
- ½ cup frozen peas
- Sesame seeds and sliced green onion for garnish (optional)
Instructions
1. Brown the Chicken
Heat the oil in a large skillet over medium-high heat. Add the chicken and cook on all sides until browned.
2. Sauté the Vegetables
Add onions and carrots to the skillet, cooking until the onions turn translucent (about 3 minutes). Add the bell pepper and cook until softened.
3. Cook the Rice
Stir in the cooked rice and cook until it begins to brown. Add the soy sauce and maple syrup, stirring to combine.
4. Cook the Eggs
Push the rice to one side of the skillet. Pour the beaten eggs into the empty space and cook over medium-low heat until just set. Break the eggs into pieces using a spatula and mix them into the rice.
5. Finish the Dish
Add the frozen peas and stir everything well. Cook for an additional 2-3 minutes, until the peas are heated through.
6. Serve
Serve hot, garnished with sesame seeds and sliced green onions, if desired.
