Ingredients
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 pound cooked chicken (shredded or diced)
- 1 packet (1 oz) taco seasoning
- 1 teaspoon chili powder (optional, for extra heat)
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 cup frozen or canned corn, drained
- 1 can (10 oz) Rotel tomatoes with green chilies, undrained
- 4 cups chicken broth
- 1 cup water (optional, for thinner soup)

Instructions
Step 1: Sauté Aromatics
- Heat olive oil in a large pot over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.
- Add minced garlic and sauté for an additional minute until fragrant.
Step 2: Add Ingredients
- Stir in the taco seasoning and chili powder (if using), coating the onion and garlic.
- Add the shredded chicken, diced tomatoes, black beans, pinto beans, corn, Rotel tomatoes, chicken broth, and water (if needed). Stir to combine.
