Easy Cream Cheese Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 8 oz cream cheese, softened
  • 1 packet ranch seasoning mix (or 2 tbsp homemade ranch seasoning)
  • 1/2 cup shredded cheddar cheese (optional)
  • 1/4 cup chicken broth (optional, for a creamier texture)
  • Salt and pepper, to taste
  • Fresh parsley (optional, for garnish)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the chicken: Season both sides of the chicken breasts with salt and pepper.
  3. Mix the sauce: In a medium bowl, combine the softened cream cheese, ranch seasoning mix, and chicken broth. Stir until smooth and well combined.
  4. Cook the chicken:
    • Place the chicken breasts in a baking dish.
    • Spread the cream cheese mixture evenly over the chicken breasts.
  5. Bake: Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  6. Optional topping: In the last 5 minutes of baking, sprinkle shredded cheddar cheese on top of each chicken breast and return to the oven until melted and bubbly.
  7. Serve: Garnish with fresh parsley, if desired. Serve with your favorite side dishes like mashed potatoes, rice, or steamed vegetables.

Tips:

  • For added flavor, try using garlic powder or onion powder in the cream cheese mixture.
  • If you want to make the dish a bit lighter, swap the full-fat cream cheese for a reduced-fat version.
  • This recipe can be easily adapted for a slow cooker. Simply place the chicken breasts and sauce ingredients in the slow cooker, cook on low for 6-7 hours, and enjoy a hands-off meal!
  • Serve with veggies or a salad to balance the richness of the dish.
