Ingredients
For the Base
- 1 ½ cups biscuit crumbs (150 g) or graham crackers
- ¼ cup unsalted butter (60 g), melted
For the Cheese Filling
- 10.5 oz full-fat cream cheese (300 g), room temperature
- ½ cup granulated sugar (100 g)
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- 1 ½ tbsp all-purpose flour (14 g)
- ¾ cup full-fat sour cream (185 g), room temperature
Optional Toppings
- Strawberry marmalade
- Fresh berries of your choice
Instructions
- Prepare the Base
Use a food processor to blend the biscuits into fine crumbs. In a bowl, combine the crumbs with melted butter and mix well.
Divide evenly into 12 muffin liners in a muffin pan. Press the mixture tightly and evenly using a spoon. Set aside. - Make the Cheese Filling
Beat the cream cheese on low speed until smooth. Gradually add in the sugar. Add the eggs one at a time, mixing just until combined.
Stir in the vanilla extract, lemon juice, and flour. Finally, add the sour cream and mix everything together until smooth. - Assemble the Mini Cheesecakes
Use an ice cream scoop (1.5 tbsp) to divide the cheesecake filling evenly into the prepared muffin pan. Gently shake the pan to flatten the tops. - Bake
Preheat the oven to 320ºF (160ºC). Bake on the ⅔ lower rack for 15 minutes, or until the center is slightly wobbly and not fully set. Remove from the oven and let cool in the pan to room temperature. Refrigerate overnight. - Serve
Serve the mini cheesecakes as-is or with strawberry marmalade and fresh berries. Enjoy!
Notes
- Avoid over-mixing the filling to prevent cracks during baking.
- Use a portable oven thermometer to ensure the correct temperature.
- For easier removal, chill the cheesecakes overnight before taking them out of the pan.
- Keep them at room temperature for no more than 30 minutes. If needed, freeze for 1-2 hours to help maintain their structure.
- Mini cheesecakes can be stored in the freezer for up to 6 months.
