✅ 1/2 teaspoon ginger, minced (optional)
✅ 1 tablespoon gochujang (Korean chili paste)
✅ 1 tablespoon soy sauce
✅ 1 teaspoon fish sauce (optional)
✅ 2 cups vegetable or chicken broth
✅ 1 block soft tofu (about 14 oz), cut into cubes
✅ 1/2 cup sliced mushrooms (shiitake or button mushrooms work well)
✅ 1 small zucchini, sliced (optional)
✅ 1 egg (optional, for poaching)
✅ Salt and pepper to taste
For Protein (optional):
✅ 1/2 lb ground beef, pork, or seafood (shrimp or clams work well)
For Garnish:
✅ 2 green onions, chopped
✅ 1 teaspoon sesame seeds (optional)
✅ 1-2 fresh red chili peppers, sliced (optional)
Instructions
Step 1: Prepare the Ingredients
1️⃣ If using protein (such as ground beef, pork, or shrimp), cook it in a separate pan with a bit of oil over medium heat until browned. Set aside.
2️⃣ Cut the soft tofu into cubes, slice the onion, and prepare the mushrooms and zucchini (if using). Mince the garlic and ginger.
Step 2: Make the Broth
3️⃣ Heat sesame oil in a large pot over medium heat. Add the onion and sauté for about 3 minutes, until softened.
4️⃣ Add the garlic (and ginger, if using) and cook for another minute, until fragrant.
5️⃣ Stir in gochujang and soy sauce, and cook for 1 minute to allow the flavors to meld together.
Step 3: Add the Broth
6️⃣ Pour in the vegetable or chicken broth, bringing the mixture to a simmer.
7️⃣ Add the mushrooms and zucchini (if using), and let everything simmer for about 5-7 minutes.
Step 4: Add the Tofu and Protein
8️⃣ Gently add the soft tofu cubes to the pot, breaking them apart slightly if you prefer smaller pieces. Let the tofu heat through for 2-3 minutes.
9️⃣ If you’re using cooked protein (like ground meat or shrimp), add it into the pot and stir gently.
Step 5: Poach the Egg (Optional)
🔟 Crack an egg directly into the stew, making sure the yolk stays intact. Cover the pot and let the egg cook for 2-3 minutes, or until the white is fully set and the yolk is still runny (or longer if you prefer a fully cooked egg).
Step 6: Season and Garnish
1️⃣1️⃣ Taste the stew and adjust the seasoning with salt and pepper as needed.
1️⃣2️⃣ Garnish with green onions, sesame seeds, and fresh chili peppers for extra flavor and heat. Serve hot with a side of steamed rice.
Tips for the Best Soondubu Jjigae
✔ Tofu Tip: For the best texture, use fresh, silken tofu (soft tofu) as it holds up well in the stew and absorbs the flavors beautifully.
✔ Customize the Protein: You can easily customize the protein in this stew—use chicken, pork, or seafood like shrimp or clams for a different twist.
✔ Broth Variations: If you prefer a richer broth, you can add Korean anchovy stock or kombu (seaweed) for depth of flavor.
✔ Spicy Level: Adjust the amount of gochujang to control the spice level. Add extra chili peppers for more heat!
✔ Add Veggies: Add more vegetables like spinach, bok choy, or tofu skin to make the stew even heartier.
