This Easy Vegan No-Bake Strawberry Crunch Cheesecake is a luscious, fruity, and creamy dessert that’s entirely plant-based and requires no baking. With a crunchy nut and oat crust, a smooth cashew-based cheesecake filling, and a vibrant strawberry topping, it’s perfect for summer gatherings, birthdays, or anytime you crave a sweet treat. Light, refreshing, and utterly delicious, this cheesecake is a guaranteed crowd-pleaser.

Ingredients

For the Crust

  • 1 ½ cups rolled oats
  • ½ cup almonds or walnuts
  • 3 tablespoons maple syrup
  • 3 tablespoons coconut oil, melted
  • ¼ teaspoon salt

For the Strawberry Cheesecake Filling

  • 1 ½ cups raw cashews, soaked in water 4–6 hours or overnight
  • ½ cup coconut cream
  • ¼ cup maple syrup
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • ½ cup strawberry puree (fresh or thawed frozen strawberries)

For the Strawberry Crunch Topping

  • 1 cup strawberries, chopped
  • ¼ cup coconut sugar or brown sugar
  • 2 tablespoons rolled oats
  • 1 tablespoon coconut oil, melted

Instructions

  1. Prepare the crust:
    • In a food processor, pulse oats and nuts until finely ground.
    • Add maple syrup, melted coconut oil, and salt; pulse until mixture sticks together.
    • Press evenly into the bottom of an 8-inch springform pan or small dish. Chill in the fridge while preparing the filling.
  2. Make the filling:
    • Drain soaked cashews and add to a high-speed blender with coconut cream, maple syrup, lemon juice, and vanilla. Blend until smooth and creamy.
    • Add strawberry puree and blend briefly to incorporate color and flavor.
  3. Assemble the cheesecake:
    • Pour the filling over the chilled crust and smooth the top. Refrigerate for at least 4 hours, or until firm.
  4. Prepare the crunch topping:
    • In a small pan over medium heat, sauté chopped strawberries, coconut sugar, oats, and melted coconut oil for 3–5 minutes until slightly caramelized. Cool slightly.
    • Sprinkle over the cheesecake before serving.
  5. Serve:
    • Slice with a hot, sharp knife for clean edges. Garnish with fresh strawberries if desired.

Tips & Tricks

  • Soak cashews: This is crucial for a silky smooth cheesecake filling. If short on time, boil cashews for 10 minutes to soften.
  • Crust alternatives: Use pecans, macadamia nuts, or gluten-free cookies for variety.
  • Strawberry puree: For a smoother pink filling, strain seeds from the puree if desired.
  • Chill time: Longer chilling enhances firmness, making slicing easier.

Variations & Substitutions

  • Mixed berry version: Substitute strawberries with raspberries, blueberries, or blackberries.
  • Chocolate swirl: Add 2 tablespoons melted vegan chocolate and swirl into filling before chilling.
  • Nut-free: Use sunflower seeds or pumpkin seeds instead of nuts in the crust.
  • Mini cheesecakes: Use muffin tins or small jars for individual servings.
