These Easy Zucchini Patties are crispy, golden, and packed with flavor! Made with grated zucchini, cheese, and simple seasonings, they’re the perfect way to use up extra zucchini. Serve them as an appetizer, side dish, or light meal with your favorite dipping sauce.
Ingredients:
- 2 medium zucchinis, grated (about 2 cups)
- 1 teaspoon salt (for drawing out moisture)
- 1/2 cup breadcrumbs or panko
- 1/3 cup grated Parmesan cheese
- 2 large eggs
- 2 tablespoons all-purpose flour
- 2 cloves garlic, minced
- 1/2 teaspoon black pepper
- 1/2 teaspoon onion powder
- 1/4 cup chopped fresh parsley (optional)
- Olive oil or vegetable oil, for frying
Instructions:
- Prepare the Zucchini: Grate the zucchinis and place them in a colander. Sprinkle with salt and let sit for 10 minutes to draw out excess moisture. Afterward, use a clean kitchen towel or cheesecloth to squeeze out as much liquid as possible.
- Make the Batter: In a mixing bowl, combine the grated zucchini, breadcrumbs, Parmesan cheese, eggs, flour, garlic, black pepper, onion powder, and parsley (if using). Mix until well combined.
- Shape the Patties: Form the mixture into small patties, about 2-3 inches in diameter.
- Fry the Patties: Heat a thin layer of oil in a large skillet over medium heat. Fry the patties in batches for 2-3 minutes per side, or until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
- Serve: Serve warm with sour cream, ranch dressing, or marinara sauce for dipping.
