Ingredients:
- 1 lb (450g) ground pork (or ground chicken, turkey, or tofu for a vegetarian option)
- 2 tablespoons sesame oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup shredded carrots
- 1 cup shredded cabbage (or coleslaw mix)
- 1/2 cup bell peppers, thinly sliced (optional)
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon hoisin sauce
- 1 teaspoon ground ginger
- 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
- 1 tablespoon sesame seeds (optional, for garnish)
Instructions:
- Cook the Ground Meat (or Tofu):
- Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the ground meat (or crumbled tofu) and cook, breaking it up with a spoon, until browned and fully cooked through, about 5-7 minutes. Remove the cooked meat from the pan and set it aside.
- Sauté the Vegetables:
- In the same skillet, add the remaining 1 tablespoon of sesame oil. Add the diced onion and garlic and sauté for 2-3 minutes until fragrant and softened.
- Add the shredded carrots, cabbage (or coleslaw mix), and bell peppers, if using. Stir-fry the vegetables for about 5 minutes, until they start to soften but still have a bit of crunch.
- Season the Stir Fry:
- Add the cooked ground meat (or tofu) back into the pan with the vegetables. Pour in the soy sauce, rice vinegar, hoisin sauce, ground ginger, and red pepper flakes (if using). Stir everything together, coating the ingredients evenly with the sauce.
- Simmer and Combine:
- Stir-fry for another 2-3 minutes, allowing the flavors to meld together. Taste and adjust seasoning with salt and pepper as needed.
- Serve:
- Remove from heat and serve immediately. Garnish with sliced green onions and sesame seeds if desired.
