Ingredients:
- 200g dark or semi-sweet chocolate, chopped
- 125g unsalted butter, softened
- ½ cup caster sugar
- ½ cup brown sugar, packed
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup unsweetened cocoa powder
- ½ cup all-purpose flour
- ½ tsp salt

Instructions:
- Preheat the oven to 320°F (fan/convection) or 355°F (standard). Grease and line a 20cm (8-inch) square tin with baking paper, leaving a 1-inch overhang.
- Melt the chopped chocolate in the microwave for 1 minute, stirring well, then microwave in 10-second bursts if necessary until smooth. Set aside.
- Cream butter and sugars together until smooth. Add eggs one at a time, whisking well. Stir in vanilla and melted chocolate.
- Add cocoa powder, flour, and salt, mixing until combined.
- Pour batter into prepared tin and spread evenly. Bake for 30-35 minutes until set. Cool for 30 minutes, then transfer to a wire rack to cool completely.
Storage:
Store in an airtight container at room temperature for up to 7 days. For freezing, freeze the batter (not cooked brownies) for up to 3 months.
