Ingredients

  • 1 ½ lbs boneless, skinless chicken breasts, cut into bite-sized chunks
  • 4 medium Yukon gold or red potatoes, diced into 1-inch cubes
  • 3 tbsp olive oil, divided
  • 3 tbsp unsalted butter
  • 5 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • ½ tsp crushed red pepper flakes (optional, for heat)
  • Salt and black pepper, to taste
  • ½ cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped (plus more for garnish)
  • Lemon wedges, for serving

Instructions

  1. Prep the potatoes
    • In a large skillet over medium heat, add 2 tablespoons of olive oil.
    • Add the diced potatoes, season with salt, pepper, and paprika, and cook for 12–15 minutes, stirring occasionally, until golden and tender. Remove from the skillet and set aside.
  2. Cook the chicken
    • In the same skillet, add the remaining olive oil and 1 tablespoon of butter.
    • Add the chicken pieces, season with salt, pepper, and Italian seasoning, and cook for 6–8 minutes until golden brown and cooked through. Remove from skillet and set aside with the potatoes.
  3. Make the garlic butter sauce
    • Lower the heat slightly and add the remaining butter to the skillet.
    • Stir in the minced garlic and cook for 1 minute until fragrant (don’t let it burn!).
    • Add the red pepper flakes, Parmesan cheese, and parsley. Stir well until a creamy garlic-Parmesan sauce forms.
  4. Combine everything
    • Return the chicken and potatoes to the skillet.
    • Toss everything in the garlic-Parmesan sauce until well coated.
    • Let cook for 2–3 more minutes, allowing the flavors to meld together.
  5. Serve
