Harvest Chicken Skillet with Sweet Potatoes and Brussels Sprouts

This flavorful Harvest Chicken Skillet is a complete meal packed with protein, fiber, and vibrant veggies! With tender chicken, crispy bacon, caramelized Brussels sprouts, sweet potatoes, and tart Granny Smith apples, it’s a delicious, healthy dish approved for both Paleo and Whole30 diets. All cooked in one pan for minimal cleanup, this recipe is perfect for busy weeknights or meal prepping.

Ingredients

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts (cut into cubes)
  • 1 tsp kosher salt, divided
  • ½ tsp ground black pepper
  • 4 slices thick-cut bacon (chopped)
  • 3 cups Brussels sprouts (trimmed and quartered)
  • 1 medium sweet potato (peeled and cubed)
  • 1 medium onion (chopped)
  • 2 Granny Smith apples (peeled, cored, and cubed)
  • 4 cloves garlic (minced)
  • 2 tsp fresh thyme (or ½ tsp dried thyme)
  • 1 tsp ground cinnamon
  • 1 cup reduced-sodium chicken broth (divided)

Instructions

  1. Cook the Chicken: Heat olive oil in a skillet over medium-high heat. Add chicken cubes, salt, and pepper. Cook until browned and cooked through (about 5 minutes). Remove and set aside.
  2. Cook the Bacon: In the same skillet, reduce heat to medium-low and cook bacon until crispy (about 8 minutes). Remove bacon and set aside, leaving 1 ½ tbsp of bacon drippings.
  3. Cook Veggies: Increase heat to medium-high. Add Brussels sprouts, sweet potato, and onion. Cook until veggies are tender and onions are translucent (about 10 minutes).
  4. Add Apples and Spices: Stir in apples, garlic, thyme, and cinnamon. Cook for 30 seconds, then pour in ½ cup chicken broth. Let simmer until evaporated (about 2 minutes).
  5. Combine and Serve: Add the reserved chicken, the remaining broth, and cook for 2 minutes until heated through. Stir in the bacon and serve warm.

Notes:

  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop with a splash of chicken broth.
  • Customization: Feel free to add more spices or veggies to suit your taste!
