Instructions
- Cook the Chicken: Heat olive oil in a skillet over medium-high heat. Add chicken cubes, salt, and pepper. Cook until browned and cooked through (about 5 minutes). Remove and set aside.
- Cook the Bacon: In the same skillet, reduce heat to medium-low and cook bacon until crispy (about 8 minutes). Remove bacon and set aside, leaving 1 ½ tbsp of bacon drippings.
- Cook Veggies: Increase heat to medium-high. Add Brussels sprouts, sweet potato, and onion. Cook until veggies are tender and onions are translucent (about 10 minutes).
- Add Apples and Spices: Stir in apples, garlic, thyme, and cinnamon. Cook for 30 seconds, then pour in ½ cup chicken broth. Let simmer until evaporated (about 2 minutes).
- Combine and Serve: Add the reserved chicken, the remaining broth, and cook for 2 minutes until heated through. Stir in the bacon and serve warm.
Notes:
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop with a splash of chicken broth.
