These Haystack Cookies are a classic no-bake treat! Made with chocolate, peanut butter, and oats, they’re quick to whip up and perfect for satisfying your sweet tooth.
Ingredients
- ½ cup unsalted butter
- 2 cups granulated sugar
- ½ cup milk
- ¼ cup unsweetened cocoa powder
- ½ cup peanut butter (smooth or crunchy)
- 1 tsp vanilla extract
- 3 cups quick-cooking oats
Instructions
- Prepare Baking Sheets:
- Line baking sheets with parchment paper or wax paper.
- Make the Chocolate Mixture:
- In a large saucepan, combine butter, sugar, milk, and cocoa powder. Heat over medium heat, stirring frequently, until the mixture comes to a full boil. Let boil for 1 minute, then remove from heat.
- Add Peanut Butter and Oats:
- Stir in peanut butter and vanilla extract until smooth. Add oats and mix until fully coated.
- Form the Cookies:
- Using a tablespoon or cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheets.
- Cool and Set:
- Allow the cookies to cool at room temperature for at least 30 minutes, or until set.
- Serve:
- Enjoy immediately or store in an airtight container for later.
Notes
- For extra texture, add ½ cup shredded coconut or chopped nuts to the mixture.
- Use old-fashioned oats for a chewier texture, but quick oats work best for a classic haystack.
