Ingredients
Cookies:
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- 2 cups quick oats
Cream Filling:
- ½ cup unsalted butter, softened
- 1 cup powdered sugar
- 1 jar (7 oz) marshmallow creme (or fluff)
- 1 tsp vanilla extract
Instructions
- Preheat Oven:
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Prepare the Cookie Dough:
- In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy. Add eggs and vanilla, beating until combined.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture. Stir in the oats until fully combined.
- Shape and Bake:
- Scoop tablespoon-sized portions of dough and roll into balls. Place them 2 inches apart on the prepared baking sheets and flatten slightly with the back of a spoon.
- Bake for 8–10 minutes, or until the edges are golden brown and the centers are set. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Make the Cream Filling:
- In a medium bowl, beat butter until creamy. Gradually mix in powdered sugar, then add the marshmallow creme and vanilla extract. Beat until fluffy and smooth.
- Assemble the Cream Pies:
- Spread or pipe a generous amount of filling onto the flat side of one cookie. Top with another cookie to create a sandwich. Repeat with remaining cookies.

- Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
