Ingredients:
- 2 cups (300g) unsalted shelled peanuts
- 1/4 teaspoon fine sea salt (or more to taste)
- 1 teaspoon maple syrup or honey (or more to taste)
- 1 to 3 teaspoons peanut or vegetable oil (as needed)
Instructions:
- Preheat your oven to 350°F (177°C). Spread the peanuts in a cake pan or small-rimmed baking sheet.
- Roast for 3 minutes, shake the pan, then continue roasting for 3 to 5 more minutes until the peanuts are lightly browned and fragrant. Let them cool.
- For crunchy peanut butter, reserve 1/3 cup of the roasted peanuts and chop them finely by pulsing in a food processor.
- Add the remaining roasted peanuts to the food processor. Process for 1 minute, scrape the sides, then process for 2-3 more minutes until smooth and shiny.
- Add the salt and maple syrup or honey. Blend until well combined.
- If the peanut butter is too thick, add 1 teaspoon of oil at a time until desired consistency is reached.
- For crunchy peanut butter, stir in the reserved chopped peanuts.
- Transfer to a jar and refrigerate for up to 1 month.
